  CUMIN SEEDS

Cumin seeds are the seeds of cuminum cyminum, which belongs to the parsley family. It is pale green in color and elliptical in shape with deep furrows. Cumin seeds has a penetrating flavour and aroma.

Description
Cumin is the dried, white fruit with greyish brown colour of a small slender annual herb. The surface of the fruit has 5 primary ridges, alternatively has 4 less distinct secondary ridges bearing numerous short hairs. The plant is 15 to 50 cm high. The aromatic seed like fruit is elongated, ovoid, 3 to 6 mm long, slightly bitter and has a warm flavour. The flowers are white or rose coloured in small umbels.

  FENUGREEK SEEDS

A plant belonging to the Fabaceae family, fenugreek leaves are used as a herb and the seeds as a spice. India is the largest fenugreek producer in the world.
Fenugreek methi seeds consists of the dried ripe seed of Trigonella foenumgraecum L.

Odour and taste of fenugreek methi seeds are typical, a bit of celery and bitter. Free from foreign odour and taste, such as mustiness or rancidity.

  CELERY SEEDS (Bishops Seeds)

Celery leaf stalks and roots are used around the world as a vegetable. Celery seeds are used as flavoring or spice, either as whole seeds or as celery salt, ground and mixed with salt. It is an important ingredient of Indian and European cuisine.

It is valuable in weight-loss diets. The common belief is that celery yields negative calories because it is very difficult for humans to digest. Ground celery seeds are a great source of calcium. Ancient ayurveda used celery seeds to treat colds, flu, water retention, poor digestion and various types of arthritis. 

Product description :
Ground Celery seeds from the plant Apium Graveolens L. has a pleasingly crisp texture and widely used in foods and beverages.

Uses: 
It is used to make a special food called the 'omapodi'. It is also mixed in several snacks of north and south India. It reduces flatulence caused by beans when it is cooked with beans. It may be used as a substitute for cumin as well. In Indian cuisine, ajwain is almost never used raw, but either dry-roasted or fried in ghee or oil. This develops a much more subtle and complex aroma, somewhat similar to caraway but "brighter". Among other things, it is used for making a type of paratha, called 'ajwain ka paratha'.


  DILL SEEDS

The seed is 'light brown, winged and oval, with one side flat having two ridges. The other side is convex with three ridges and three oil channels. The leaves and stalks are aromatic and are used fresh or for pickling.

  MUSTARD CRACKED

Mustard Cracked / Rai Kuria product comes from Mustard seed. This is mustard seeds with the skin removed. It is then roughly ground.

New crops of this product come in Febuary and stay till April end. Rai Kuria come in all most the last week Febuary and stay till april its prime season

Description :
The mustard seed is poured in the water for ½ hour next days it is dried in the original sunlight by drying it the upper cover of the seed becomes soft. Then it is given machinery department. The seed is divided into 2 pieces by Grinding. There the cover gets separated from the seed and the yellow soft seed can been seen. Then it goes for the Sortex machine treatment. And with last we get the final product.

Uses :
Rai Kuria is used mainly in pickles and is the life and soul of mango pickle that would otherwise be incomplete without the Rai Kuria. It is the Rai kuria that gives pickles that very special tangy taste that makes Indian pickles famous round the world.


  METHI DAL

It comes from fenugreek seeds. When fenugreek seeds are crushed it becomes Methi Kuria.

New crops of this product come in March and stay till May. Methi Kuria come in 15th march and stay till June end its prime season.

Description :
First of all fenugreek seeds are put in machine to grind, then these seeds are crushed in machine and at last we get coarsely ground fenugreek seeds that called methi kuria.

Uses :
The kuria is usually added to pickles. Its slightly bitter aroma lends pickles its mouthwatering flavor that is very unique, and puts Indian pickles on the list of favorites the world over. 


  ROASTED CORIANDER

These are used as Dhana Dal which is very famous in India usually consumed after meals and it is also eaten as snack. In this way roasted coriander seeds are known as Dhanadal. 

Description :
It is the dried ripe fruit of an annual plant Coriandrum Sativum, an annual herb in the family Apiaceae belonging to the parsley family. The seeds are almost spherical, one end being slightly pointed, the other slightly flattened. There are many longitudinal ridges. The length of the seed is 3 - 5 mm (1/8” - 3/16”) and the colour, when dried, is usually brown, but may be green or off white. It has a sweet, citrus-like flavor and a warm and mild pungency.

Uses :
Dhana Dal is used as Mukhwas (mouth freshener) by Indians and it is invariably served after every meal. It has a nutty flavor that blends well with the other aromatic ingredients of Mukhwas. This seeds when crushed have a lemony citrus flavor and are nutty, spicy and orange-flavored. It is possibly the most important ingredient in Indian curries and dried roasted Coriander seeds (Dhana dal) are eaten in “Mukhwas ”.
